DESCRIPTION:
Thyrsos, is a relic of Dionysus, the god of grape harvest, winemaking and wine in the Greek Mythology. Thyrsos was a wand or staff of giant fennel covered with ivy vines and leaves, and always topped with a pine cone. For this wine, we chose the Thyrsos which is much like the wine itself; a symbol of prosperity, fertility, hedonism, and enjoyment in general. The Thyrsos drew attention within Dionysus’s unique and hedonistic story, much like our The Thyrsos wines.
PALATE:
This exquisite fruit driven wine shows the benefit of a great season, made from fruit grown in the selected wine region. Plum, fruitcake, blackcurrant and spicy flavours, this wine has got it all. The back palate is textured and the layered tannins assist with the overall weight and integration. Enjoy with slow cooked lamb shoulder or hard cheddar cheeses.
WINEMAKING NOTES:
Vineyard, site and parcel selection is a major focus of all our wines at Chovin Estate. For Thyrsos, we select the sites that display varietal expression, concentration and finesse. Fermentation occurred naturally in open fermenters and pressing off the skins once the colour, flavour and tannin had been maximised. Ageing occurred in French oak barrels ranging in size from puncheons (500L) to barriques (225L) for 3 months. No racking of the wines occurred in this time, so the wine aged on its lees, allowing sulphur additions to be kept to a minimum and the true character of the wine to blossom.
