DESCRIPTION:
Thyrsos, is a relic of Dionysus, the god of grape harvest, winemaking and wine in the Greek Mythology. Thyrsos was a wand or staff of giant fennel covered with ivy vines and leaves, and always topped with a pine cone. For this wine, we chose the Thyrsos which is much like the wine itself; a symbol of prosperity, fertility, hedonism, and enjoyment in general. The Thyrsos drew attention within Dionysus’s unique and hedonistic story, much like our The Thyrsos wines.
PALATE:
Full of dark berries and plums, full bodied and mouthcoating, this richly-coloured and flavoured wine is from South Eastern Australia. Multi layered and complex with a savory finish framed by fine grained tannins. An excellent everyday wine, it suits hearty soups and slow cooked lamb, making it a perfect choice for winter evenings.
WINEMAKING NOTES:
We selected some of the best Cabernet grapes from the selected vineyards to make this wine. All parcels were fermented separately in open fermenters for 10-12 days and then after fermentation was completed on skins. No racking occurred in this time to increase the texture of the wine, which is evident in the mouthfeel.
