DESCRIPTION:

Thyrsos, is a relic of Dionysus, the god of grape harvest, winemaking and wine in the Greek Mythology. Thyrsos was a wand or staff of giant fennel covered with ivy vines and leaves, and always topped with a pine cone. For this wine, we chose the Thyrsos which is much like the wine itself; a symbol of prosperity, fertility, hedonism, and enjoyment in general. The Thyrsos drew attention within Dionysus’s unique and hedonistic story, much like our The Thyrsos wines.

PALATE:

Made from grapes grown in the selected premium vineyards, chosen to maintain the style of this outstanding wine. The richness of the nose follows through to the palate with favours of plums and currants dominating. Featuring a complex bouquet with cedar and sweet leather highlights, the palate is flavoursome and textured with full length and finish.

WINEMAKING NOTES:

We selected some of the best Merlot grapes from the selected vineyards to make this wine. All parcels were fermented separately in open fermenters for 7 days with gentle pumping over and plunging until we felt the tannins were integrated. Ageing occurred in French oak barrels ranging in puncheons (500L) for 3 months.
