DESCRIPTION:
Chovin Estate Wines respectfully acknowledges the South Australia people, past and present, traditional custodians of the land on which this wine was grown. This is a wine, which well reflects man’s toil with the soil.
This Shiraz is deep red in colour with purple hues. Red berries and plums on the nose, a spicy, peppery, plummy palate with good length of flavour and a smooth, lingering finish.
PALATE:
Generous rich dark fruits of, blackberry, blood plum with undertones of caramelised figs. Chalky tannin, hints of oak, with tuned acid.
WINEMAKING NOTES:
A combination of small (8 tonne) and large (25 tonne) fermenters were used with a fermentation cycle of 8 to 12 days. Utilising these different fermentation options has enabled us to blend a stylish, velvety soft wine showing the medium weight and finer tannin structure of Shiraz.
