DESCRIPTION:

Instead of spraying weeds we will recruit flocks of alpaca to eat them for us. Their excrement becomes the most natural fertiliser for our vines. Everyday during the sun sets, their hair will reflect the dazzling light between the vines.
Rather than hoping our vineyards are not infected by a fungal outbreak, we spray prepared natural ground quartz over our vines to strengthen the cell walls. This makes them fungus resistant while also enhancing the effects of natural sunlight and promoting stronger growth.

PALATE:

Full bodied, medium tannins and lingering finish. Also vying for taste and textural attention - pomegranate, cranberry, Madagascan vanilla pod, liquorice, and the judicious use of new oak.

WINEMAKING NOTES:

Select parcels of grapes, both Cabernet Sauvignon and Shiraz, were handpicked and crushed to our 8 tones open top stainless steel fermenters. The balance of the grapes was machine harvested and fermented in our larger static fermenters. The natural or ‘wild’ yeasts present on the grape skins initiated fermentation, cultured yeasts were then added to complete fermentation. The result is a wine with excellent depth of colour, richness and complexity. After draining and pressing off skins the wine was matured in American oak.
