DESCRIPTION:

Chovin Estate Premium Reserve Cabernet is a family of exceptional wines, carefully sourced and masterfully crafted to capture the true essence of specific, special sites within the Coonawarra. This wine is intriguing, distinct and true to the unique parcel of dirt that inspired their creation, while remaining rooted firmly in the heart of the Coonawarra.

A wine that is fruit forward and easy drinking. Drying tomato leaf, peppercorn, small goods and blackcurrant showing on the nose. Blackcurrant flavours with a rounded plum finish, the palate is soft and smooth, showcasing summer fruits with a very fine-grained tannin.

PALATE:

Mint and blackcurrent flavours with a rounded plum finish. Toasty tannins with a lingering oak sweetness.

WINEMAKING NOTES:

Fruit was selected from premium Coonawarra vineyards, crushed and underwent fermentation for two and a half weeks on skins. Following fermentation the must was gently pressed before being transferred to oak. The wine was matured in French and American oak for 10 months before blending and bottling. The resulting wine has excellent depth with integrated oak tannins.
