DESCRIPTION:
Millions of years ago this land was covered by sea. As the sea resided, a bed of limestone was formed leaving in its place a landscape rich with shells, fish and even whale fossils. The nutrient rich, stony soils, layered over fossilised limestone, provides excellent drainage, balanced with perfect water retention. Influenced by our cool, coastal climate and artesian water supply, the grapes naturally ripen, slowly resulting in intense fruit flavours.
Intense vibrant purple. Plum, raspberry and blackberry on the nose that mirrors the palate. The subtle oak carries through the length of the palate. This wine pairs well with full flavoured meat dishes.
PALATE:
Vibrant fruit, vanillin, complimented with fine tannins and subtle toasty oak
WINEMAKING NOTES:
Wild yeasts initiate fermentation, contributing to the individual complexities of the wine, creating richness and fine textures. The skins were plunged regularly to extract colour, tannin and flavour. Once fermentation was complete, the wine was matured in Tonnellerie Sylvain barriques.
