DESCRIPTION:

Chovin Estate Wines respectfully acknowledges the South Australia people, past and present, traditional custodians of the land on which this wine was grown. This is a wine, which well reflects man’s toil with the soil.

This classic Cabernet Sauvignon is deep brick red in colour with lifted fruit on the nose. The palate shows excellent blackcurrant varietal flavour with well integrated American oak.

PALATE:

Soft elegant palate, very drinkable even in its youth, partly due to good balance of flavours between the fruit characters and savoury notes from the oak.

WINEMAKING NOTES:

The grapes for Blue Label are crushed to small static fermenters, and as the fermentation commences, the temperature is allowed to peak early at 30°C, then given more control at around 22°C. This ensures good extraction of colour and tannin. The grapes stay on skins for around seven days, with some tanks given extended skin contact before pressing.
