DESCRIPTION:

Chovin Estate Wines respectfully acknowledges the South Australia people, past and present, traditional custodians of the land on which this wine was grown. This is a wine, which well reflects man’s toil with the soil.

The vines for this classic Bordeaux-style blend undergo select leaf removal, which exposes the grape bunches to sunshine, softening tannins and increasing the development of more complex and mature fruit flavours.

PALATE:

Rich and generous, displaying varietal Cabernet and Merlot characters including redcurrants and ripe brambly fruit balanced by subtle oak influence. This medium bodied Cabernet Merlot finishes with savoury tannins.

WINEMAKING NOTES:

At optimum ripeness the parcels of selected Cabernet and Merlot are brought into the winery where they are gently crushed into open top fermenters. Here they are manually pumped-over as required to provide softer tannin extraction. Near the conclusion of the primary fermentation the wine is drained and then pressed off. The free-run and pressings are combined based on the ideal flavour and structure before being transferred into new and seasoned oak barrels for maturation for 9 months.
